Easy Mac & Cheese Recipe for a Very Tiring Day

Whew! I did the laundry today. Yes, after 31 years of existence, it is my first time of completely washing our clothes, jeans included. I am used to washing our lingerie but we hire someone to do our laundry.

However, since my husband and I are tightening our house budget due to the fact that I am only working weekends, we have decided that I should do the laundry. We will give it a month to see if there will be any changes in our budget.

I pay Php 2500 per month for our laundry plus Php 1000 for the monthly detergent. Hopefully, our sacrifice will pay off. We are keeping our fingers crossed.

Anyway, sorry for being off topic. Since I am very tired (I woke up at 5:30AM to start the washing machine. Good thing I was able to sort and soak the whites last night. I finished at around 8:30AM), I was too lazy to cook a heavy lunch for me and Z.

Hence, I came up with the Easy Mac & Cheese recipe.

Prep Time: 10 minutes
Cooking Time: 20 minutes

Ingredients

125 g elbox macaroni
1 cup evap milk with 1 cup water
1 box cheddar cheese
1/8 cup butter
1/8 cup all-purpose flour
salt and pepper to taste

Procedure

1) Cook the elbow macaroni according to the package instructions. Make sure to stir it occasionally until cooked to avoid clumping. Remove from heat when pasta is already al dente or firm to the bite.

2) In another saucepan, melt the butter over medium heat. Stir in the flour, salt and pepper until smooth. This will usually take about five minutes.

3) Slowly add the milk and water solution while continuously stirring. Add in the Cheddar cheese and mix until cheese is melted. This will take about two to five minutes.

4) Fold in the cooked macaroni to the cheese sauce. Make sure to coat all the macaroni but avoid overcooking as burnt milk and cheese will show or taste in the recipe.

5) Eat as it is or you can serve it as a side dish to your favorite meat.

Z loves mac & cheese on its own or with chicken nuggets. Next time, I will try to show you, dear readers, my favorite chicken fingers recipe that goes well with this recipe.

Bon appetit!
